Whoa!! I had no idea WIRD was doing those kind of fermentations. I had assumed they got their heavier rum from Long Pond...clearly ignorance is not bliss.

Question: you mentioned a very high ester rum. Did WIRD make it? If so, do they have a muck pit?
There *may* be some experimentation with the bacterial side of things, but their secret weapon is the yeast nursery. See pp. 290-291 of MCR.
